Remember those awesome appetizers that some people call frog eyes? If you haven’t had the pleasure of eating these fun little treats, let me explain…they are dill pickles covered in cream cheese and then wrapped in dried beef and sliced into bite size portions. Easy to grab and pop in your mouth at any party, but definitely a bit more on the labor intensive side.
Well, now that life is getting a bit busier with me hauling around our 4 month old and trying to keep up with a social calendar, easy and quick recipes are my go-to. For this three ingredient dip recipe, I can easily keep 2 of the 3 ingredients in my pantry all the time, so they’re on hand whenever I need them. Plus, I get the taste of an old favorite without the labor and time!
Three Ingredient Dip Recipe
Beef and Dill Pickle Dip Ingredients:
- 16 oz jar of baby dill pickles
- 9 oz jar of dried beef
- 16 oz cream cheese (two bars)
What to do:
Cream your softened cream cheese. In a food processor, finely chop your dried beef, add this to the cream cheese and mix together. Drain and dry the dill pickles. Toss into your food processor and chop finely.
Add them to the cream cheese and beef mixture. Mix it all together, and that’s it!
Serve chilled and with your favorite crackers or pita chips.
